Introducing LEM's non-edible Hot Dog casing! Grind meat into a fine emulsion, then choose one of these cooking methods: stuff casings into 180 water for 30 minutes or until meat reaches 165; or smoke filled casings at 180 until meat reaches 165. Avoid using the oven. After cooking, immediately cool hot dogs in ice water for 20 minutes. Refrigerate or freeze in casing, then peel before eating. Enjoy boiling, grilling, or broiling your homemade hot dogs, yielding approximately 27-28 lbs.
